Introduction

Ingredients

    1 28 oz can crushed tomatoes
    1 medium onion, diced
    3 stalks celery, diced
    3 medium carrots, diced
    1 head cabbage, shredded
    1 14.5 oz can green beans
    1 12 oz can sweet yellow corn
    1 15 oz can pinto beans

Directions

1. Place tomatoes, onion, celery, carrots, and cabbage in a pot, simmer over medium heat until tender, about 20 minutes.

2. Add canned vegetables. Heat and serve.

    A great basic recipe. I did use frozen mixed veggies instead of canned. I rinsed the pinto beans well, and used low sodium italian-seasoned canned tomatoes. I added 1 Tb. mrs. dash for the seasoning and 2 cps. low sodium veggie broth. Very yummy and low calorie. - 9/21/08

    I love veg soups, esp w/cabbage; this one sounds great.... the crushed tomatoes will add more flavor than my usual recipes. I also add barley most of the time so as to make a complete protein. - 1/26/08

    I enjoyed this soup made in my crockpot. It lasts well in fridge and even freezes well, which I do in portions so I can have it microwave wamr quickly. I throw in a little leftover meat (all of them are great - fish, chicken, beef, pork), if I want more protein. - 6/18/07

    I would add a can of the low sodium chicken broth, and a little more seasoning. I would assume the "serving" would be the usual 1 cup size, but with the amount of calories in this soup you could easily eat 2 cups. - 3/20/09

    This soup is delicious. I didn't drain the juice from any of the canned veggies so therefore I didn't have to add any salt. I didn't have pinto beans so I added drained and rinsed chick peas. The juice from the chick peas is very salty and that's why I drained and rinsed them. Will make it again - 9/22/08

    I used 2 smaller cans of diced tomatoes, one plain and one with green peppers for added kick, used frozen corn and green beans, added garlic, and garnished with fresh cilantro. Very versatile. - 9/24/08

    Am I missing something in this recipe? Where is the liquid? I added 3 cans of chicken broth and some chicken sausage. Then it was delicious. Next time I will use tomato juice (low salt) or V8 for the liquid. I also added some Italian seasoning. Then it was "soup", hearty and delicious. - 5/15/08

    I make this but always cook it in my homemade chicken broth made with lots of herbs and no salt. Chill and remove fat and freeze the broth. Makes it more flavorful. - 3/20/09

    I made this early morning, but did not use any tinned items, used fresh ingredients, (at least then you know what your eating). This meal was actually very tasty indeed, also added a little pepper to season, great stuff! 3/5 - 10/30/09

    When you use canned veggies to make the recipe, but then record them as fresh ones (like with your green beans and pinto beans), the sodium is not going to be right on the nutritional info. Just something to think about. - 8/29/09

    This is just like the Weight watchers soup, except w/o the meat. I always add at least a can of extra water and a handful of rice or barley for substance and texture. Great meal or snack, and adds to your liquid intake for the day. - 9/27/10

    I like that you can change the vegetables according to what's in the fridge. I also like to blend the cabbage and tomato base to make it creamy, and then add the other vegetables. A little grated cheese sprinkled on top gives it body. - 8/2/10

    I have made this several times now. I have added different things like squash, sweet potato and red potato to it. I freeze it in portion sized containers and use it over the following few weeks. I like the soy meat in it a lot. - 3/21/10

    This soup was my first to try on SP. I had my husband make it while I was at work. It was really great! I asked him to add Ground venison to it. I think that it fed a lot of people, I might make a half size next time, we had left overs for days. - 10/30/09

  • I agree with others asking were is the liquid. I should have read all of the reviews before hand. I did add a can of water and a can of broth, and only used 1/2 a head a lettuce and it didnt have enough liquid. I even tried to add spices myself, but it didnt make much of a diff. I did add one container of Trader Joes organic low sodium veggie broth and I also added frozen veggies 15 minutes before it was finished cooking to give it a brighter appearance (also some crushed garlic, zucchini, sea salt and fresh basil.)
