Cheddar Chicken Soup

Ingredients

    2 boneless skinless chicken breasts cut into bite-sized pieces

    2 tbps flour

    1 can (14.5 oz) chicken broth

    2 cups skim fat-free milk

    2 cups frozen mixed vegetables

    1 cup cheddar cheese

Directions

1. spray large saucepan with olive oil cooking spray

2. add chicken and cook for 5 minutes on medium-high heat then stir in flour and cook while stirring an additional minute

3. add broth, milk, and veges, stir and reduce heat to medium.

4. Bring mixture just to a boil, stirring frequently then remove from heat

5. Stir in cheese untll completely melted

Makes about 7 one-cup size servings
