Ingredients

    1 cup quinoa (uncooked)
    1 bell pepper, chopped
    1 avocado, diced
    cherry tomatoes, sliced in half
    3 cups chopped broccoli florets
    1 lemon
    Cavander's Greek seasoning to taste

Tips

Add or omit whatever vegetables you want.


Directions

Cook quinoa according to package instructions. Combine the vegetables in a bowl. When quinoa is finished, zest and squeeze the lemon. Add the greek seasoning to taste. Once the quinoa has cooled, add to the vegetable mixture and stir. Refrigerate overnight.

Serving Size: Makes about 4 2-cup servings
