Introduction

Delightfully easy and tasty salad with black beans, corn and blueberries. This is unusual, but so wonderfully good. Delightfully easy and tasty salad with black beans, corn and blueberries. This is unusual, but so wonderfully good.
Number of Servings: 9

Ingredients

    2 ears of corn
    1 can black beans
    1 cup fresh blueberries
    1 T. olive oil
    2 T. white balsamic vinegar
    2 T. lime juice
    1/2 t. cumin
    Italian Seasoning

Directions

Spray corn ears lightly with spray-on olive oil. Dust well with Italian Seasoning. Wrap in foil and grill until ears are slightly charred and kernals are cooked but still crispy. Cool. (We had corn for another meal and just prepared these to cook along with the cobs for dinner.) When corn is cool, cut kernals off of cob and put in a mixing bowl. Rinse and drain beans and add to corn. Add blueberries. In a small bowl or cup, mix together the olive oil, vinegar, lime juice and cumin. Whisk until thoroughly blended. Pour over ingredients in bowl, stir and serve on lettuce cups.

Serving Size: Makes 9 one-third cup servings.
