Raw Carrot & Ginger Soup

Introduction

This is a good cold carrot soup for a hot summer day. However, I do enjoy it year round. This is a good cold carrot soup for a hot summer day. However, I do enjoy it year round.
Number of Servings: 3

Ingredients

    3 cups carrot juice (If juicing yourself, this is approx. 20 large carrots.
    1 avocado
    1/2 cup fresh coconut meat
    2 T honey
    1 T finely chopped fresh root ginger
    ground cayenne pepper to taste
    Sea Salt

Tips

This soup is best when it is served cold. Therefore, prepare a head of time and leave it sit in the refrigerator for several hours before serving.


Directions

1. Put the carrot juice, avocado, coconut, honey, ginger, cayenne pepper, and salt into a blender and whiz until completely smooth.

2. Taste and adjust the seasoning if necessary.



Serving Size: makes approximately 3 servings of 1.25 cups
