1 can creamed style corn processed in blender or food processor.1 cup self-rising corn meal1 cup unprocessed wheat bran2 egg whites1/3 cup turbinado sugar1/4 (scant) Splenda1/4 cup lite/no-fat evaporated milk
In bowl mix well the remaining ingredients, and scoop by approximately 1/4 cups into greased muffin tin. Bake @ 400 for 12-15 min.
*May omit raisins and add walnuts, or blueberries or other berries without the cinnamon.
