Lentil Curry

A delicious, nutritious comfort food! A delicious, nutritious comfort food!
Number of Servings: 8

Ingredients

    2 large onions, chopped
    4 cloves garlic, minced
    1 c. brown rice
    4 TBS olive oil
    3 tsp. curry powder
    8 c. water
    3/4 tsp. salt
    4 TBS lemon juice
    2 c. lentils
    16 oz. frozen spinach

Directions

Saute onions, garlic and brown rice in oil for 3-4 minutes on medium heat. Add curry powder and stir through. Add water, salt, lemon juice, and lentils. Stir through and bring to a boil. Cover, reduce heat and simmer until tender (about 30 minutes.) Add spinach and heat through. This is great on it's own, but even better with a salad on the side or, during winter, some warm cornbread. MMM...
