Skillet Goulash One Dish Meal

Ingredients

    1 lb. Extra Lean Ground Beef
    2 C Diced Onion
    1 1/2 C Dicey Celery
    3/4 C Diced Bell Pepper
    3/4 C Diced Carrot
    2 tsp. Minced garlic
    1 can Low sodium Beef Broth 14 oz
    1 can Tomatoes diced 14.5 oz
    1 can Tomato Paste 6 oz
    7 oz. Barilla elbow macaroni
    1 tsp. Salt
    1/4 tsp. Black pepper
    1/4 tsp. Cayenne pepper
    2 tsp. Fresh thyme chopped or 1 tsp. dried
    1 tsp. Ground cumin
    2 tsp. Paparika
    1 Tbsp. Dried parsley
    1 C Water




Directions

Use 11.5" or larger skillet.
Crumble ground beef into large skillet and saute over medium heat until light brown. Add chopped onion, celery, green pepper and carrots and saute 12 more minutes. Add minced garlic and saute 3 minutes. Add rest of the ingredeints and mix well so that the macaroni is covered by liquid. Bring mixture back up to a boil and simmer 12-15 minutes until the macaroni is done. You may need to add additional water if mixture gets too dry before macaroni is done.
Serve.
My family likes bread and butter with goulash.
Makes 6-1 1/2 C servings.
