Mixed bean soup with tofu

Introduction

Ingredients

    * 1.5 cups dried beans (makes about 3.75 cups cooked)
    * 150g (about half a block) Firm tofu, cubed
    * 3 medium onions, chopped to chunky pieces
    * 4 cloves (or go wild!) garlic, chopped
    * one medium tomato
    * 4 tbsp tomato paste
    * Olive Oil, 2 tbsp
    * Thyme, fresh, 3 tsp
    * Chili powder, 1 tbsp
    * Coriander seed, crushed, 1 tbsp
    * Pepper, black, 2 tsp
    * Vegetable Broth, 2 cup (or basically one cube of bouillon)

Directions

Soak beans in a very large pot for a number of hours (4-24h, depending on the type of bean). Rinse the beans and discard water.

With fresh water, boil the beans vigorously for about 2 minutes, then add pepper and broth cube (if you're adding already made broth, might want to remove some of the beans' water first), set them to simmer for 60 minutes.

Heat oil in a pan; sautee onions, garlic, tofu and mushrooms. Add in thyme, coriander, and tomato paste.

When the beans are just tender, add the sautee mixture to the soup. It might take less or more than 60 minutes, depending on soak time and your bean type. Add the whole tomato at the same time - cut into pieces if you prefer. Simmer for another 30 minutes or so.

Salt, pepper, sugar to taste.
