Gizzis Posh Tomato Soup

Ingredients

    3 red peppers, seeded and halved
    5 vine tomatoes halved
    2 tbsp olive oil
    1 onion, peeled and finely chopped
    3 garlic cloves, peeled and finely chopped
    100g sundried tomatoes
    1 tsp paprika
    200ml vegetable stock
    3 springs basil

Tips

Serve topped with 25g of stuffed cappettlli of your choice, a drizzle of pesto and a sprinkle of Parmesan.


Directions

Mix the paprika with the sundried tomatoes.

Preheat the oven to 200C/400F/Gas Mark 6. Lay the pepper haves cut side up on a baking sheet and top with the vine tomatoes. Drizzle with 1 tbsp of olive oil and season. Bake for about 25 mins.

Meanwhile place 1tbsp olive oil into a pan. Cook the onion on a low heat for about 10 mins-it should start to caramelise. Add the garlic for the last minute.

When the vine tomatoes and peppers are cooked, blend them with the onions, sun dried tomatoes, vegetable stock and basil. Process til smooth then return to the pan to reheat gently. You could sieve the soup for ultra smoothness.
