  • I baked it at 375 for 75 minutes in convection oven, the last 15 with the cover off, in a roasting pan with a small rack to raise them out of the liquid. Thanks - 4/13/09

  • This sounds delightful and easy to make ... but how much of each should be used? What temperature should the hen(s) be baked at and for how long? What do you bake in? (metal pan, pan with rack, glass pan?) - 1/7/09

    I baked 2 hens at 350 degrees for 1 hour, uncovered. Rubbed hens with pure olive oil (though virgin might have been healthier, not sure...?) Season to taste with seasoning salt, onion powder, garlic powder, and cayenne pepper (I like spice) - 2/25/10
