1/2 cup quick cooking barley
1 cup of water (to cook barley)
1 cup(or more)fresh broccoli florets
1 (15 ounce) can black beans, rinsed
1/2 cup corn (canned or frozen)
2 TBL chopped fresh cilantro
2 tablespoons lime juice
1 tablespoon extra-virgin olive oil
Pinch of cayenne pepper
Salt and freshly ground black pepper to taste
Add broccoli into the barley when the barley is almost finished cooking, cover and turn off heat so broccoli turns bright green and slightly softened.
Combine cooked barley, beans, corn, cilantro, lime juice, oil, cayenne pepper, salt and pepper in a medium bowl.
