1 medium onion, sliced into strips
1 tbsp low-fat margarine
1 large tomato, diced
1/4 cup tomato paste
1/2 cup frozen spinach
1/2 cup frozen peas
250 grams firm tofu
50 grams bhuna curry paste
2. Add the tomato paste, peas, spinach, tofu, and curry paste and 1 cup water and simmer until all the ingredients are cooked.
3. Serve over rice or with naan bread. Serves 4.
