Thick and spicy turkey bacon and potato chowder

Introduction

I tend to have 2 cup portions for a nicely filling soup. I tend to have 2 cup portions for a nicely filling soup.
Number of Servings: 8

Ingredients

    200g packet of turkey rashers
    6 cups of finely diced potato (with skin)
    2 small peppers, chopped (1 red, 1 green)
    2 medium onions (red is nice)
    1 medium carrot, finely diced
    Chili flakes
    1 stock cube (any flavour)
    4 cups of water
    Nonstick spray

Directions

Spray a large saucepan with nonstick spray and saute onions and turkey rashers until cooked through. Add chopped carrot and peppers and cook through. Add potato, chili flakes, stock cube and water. The water should be enough to completely cover the ingredients, and you can add less/more to suit your taste.

Bring to the boil then reduce to a low heat and simmer for around 30 minutes (until the potato is quite soft). Using a hand blender, partly-puree the chowder so it is a combination of smooth and lumpy.

Serving Size: Makes 8 cups of thick soup
