Introduction

I modified and smooshed together a couple different recipes to come up with a lower sugar, super tasty muffin full of nutrition! I modified and smooshed together a couple different recipes to come up with a lower sugar, super tasty muffin full of nutrition!

Ingredients

    1/2 cup whole wheat flour
    1/2 cup white flour
    1 cup pumpkin puree
    1/2 cup unpacked brown sugar
    1/4 cup unsweetened applesauce
    1/4 cup water
    1/3 cup egg whites (or two large eggs)
    1/2 cup oatmeal
    1 tsp pumpkin pie spice
    2 tsp baking powder
    1/8 tsp nutmeg
    1/2 tsp salt
    1/4 cup chia seeds (optional)
    3-4 TBSP mini chocolate chips (optional)

Tips

The original recipes both called for a packed 1/2 c brown sugar. I went with unpacked and added the chocolate chips for a bit of additional sweetness and flavor. Both the chia and chocolate chips are optional and included in the nutritional breakdown.


Directions

Pre-heat oven to 375
Grease and flour muffin tin (or line with paper cups)
in a large mixing bowl, gently blend all ingredients until just combined
Fill prepared muffin tins 3/4 full
Bake 18-20 minutes
