8 oz. Cottage Cheese (1% milk fat)
8 Low-fat whole wheat waffles
2 tsp. Splenda (or to taste)
Dash of vanilla
Toast all 8 waffles and then separate them into four sets of two.
Put approx. 1/4 of the cottage cheese mixture on top of four of the waffles and then cover each with another waffle.
Cut in half and serve two halves on a plate (with fresh fruit, if desired). This is a low-fat, almost sugar-free way to enjoy dessert! You can adjust the Splenda to taste since it doesn't change the fat, calories or sugar.
