Grilled Salmon Salad

Number of Servings: 4

Ingredients

    12 ounces fresh or frozen salmon
    6 cups fresh spinach
    1 cup diced tomato
    1 cup sliced green onion
    1 cup diced pineapple
    1 cup cheddar cheese
    8 ounces raspberry vinigarette salad dressing

Directions

cut salmon in to 4 fillets and grill until done (flaky )
wash spinach, and arrange on plate. On bed on spinach, arrange in spokes (like on a wagon wheel) 1/4 cup tomato, 1/4 cup green onion, 1/4 cup pineapple, and 1/4 cup cheddar cheese. Place salmon fillet on top and serve with dressing on side.
