Ingredients

2 slices of pumpernickle bread (you can use another whole grain if you'd like)
1 whole avocado, peeled, pitted, and cubed
1 Tbsp. Ken's Lite Northern Italian salad dressing (you can substitute lemon juice, I just used what I had)
    2 tbsp. feta crumbles
    6 grape tomatoes, halved
    red pepper flakes

Directions

Halve the avocado, pit it, and scoop out the fruit. Mash it with 1 tbsp. of the cheese and 1 tbsp of the salad dressing. Spread it on top of the bread slices. Top with remaining 1 tbsp. of cheese crumbles, the grape tomatoes, and a sprinkling of red pepper flakes.

LOVE avocados. This is delicious. The only thing I did a little differently is add some garlic powder (about 1 tsp.) in with the avocado and cheese. Delish! - 6/14/14
