Mock Fried Rice

Ingredients

    Bulgar wheat
    Green onions
    Egg whites
    Peas (frozen)
    Sweet Corn (frozen)
    Carrots
    Broccoli
    Tofu (optional)
    Soy Sauce, Pepper & Worcertshire sauce (opt) to season

Directions

Boil Bulgar what according to package instructions (usually 2 cups water to 1 cup wheat). Let cool while preparing other ingredients.

Scramble 3 egg whites, cook in 1 tbsp oil and put aside when done.

Chop 1-2 stems Green onions (including whites)
Dice carrots (1/2 cup)
Chop Broccoli (1 cup)
Dice tofu (1/2 block extra firm)

Bring wok with remaining vegetable oil to medium-high heat. Add green onions until aroma is given off. Add bulgar wheat, eggs, vegetables and tofu. Stir periodically, until all ingredients are hot and miced thoroughly. Add soy sauce, pepper and worcertshire sauce (season to taste).
