Introduction

I serve this over Brilla plus pasta (not calculated in calories) This is very flavorful for not many calories. I adopted this from a reciepe to make it with ingredients I had on hand. Ingredients

    1 pound boneless, skinless chicken breast
    1 tablespoon extra-virgin olive oil
    1 tablespoon minced garlic
    1 cups Green onion and Sweet onion
    1/4 teaspoon salt
    2 tablespoons all-purpose flour
    6 oz reduced-sodium chicken broth
    1/2 cup fat free milk
    2 tablespoons dry sherry (I used white wine)
    1/4 teaspoon dried thyme
    1/4 teaspoon freshly ground pepper
    2 10-ounce boxes frozen chopped broccoli, thawed, or 1 pound broccoli crowns, chopped
    .5 cup grated Parmesan cheese
    1 Tabelspoons cup reduced-fat mayonnaise
    1-2 teaspoons Dijon mustard

Directions

Preheat oven to 375 degrees F. Coat a 7-by-11-inch (2 quart) glass baking dish with cooking spray.
Heat 1/2 T olive oil in a medium skillet , place chicken in skillet and brown on both sides Cover, reduce heat to low and cook until the chicken is cooked through Set aside.

Add remaining oil to skillet over medium-high heat. (May need to add a little broth to loosen chicken drippings from the skillet. Add onions, garlic and salt and cook, stirring often, until softened 1-2 minutes. Add flour; stir to coat. Add broth, milk wine, thyme and pepper and bring to a simmer, stirring constantly. Add broccoli; return to a simmer. Remove from heat and stir in Parmesan cheese, mayonnaise and mustard.

Spread half the broccoli mixture in the prepared baking dish. Top with the chicken, then the remaining broccoli mixture. Bake until bubbling, 20 to 25 minutes. Let cool for 10 minutes before serving.
