Number of Servings: 6

Ingredients

    1 tsp olive oil
    1 cup onion, finely chopped
    1/2 pound grou1nd turkey
    2 Tbsp taco seasoning
    1 can black beans
    4 oz of taco sauce
    6 (6 in) corn tortillas cut into fourths
    1/2 cup of shredded cheese
    1 cup tomato diced
    2 scallions chopped

Directions

Heat a large nonstick skillet over medium-high heat. Swirl in the oil, then add the onion. Cook, stirring occasionally, until softened, 3-5 minutes. Add the turkey and the seasoning mix. Cook, breaking up the turkey with a spoon, until browned, about 6 minutes. Stir in the beans and taco sauce. Cook, stirring occasionally, until the flavors are blended, about 5 minutes. Remove from heat and set aside.
Preheat the broiler. Arrange the tortilla pieces in one layer on the broiler rack; spray the tortillas lightly with nonstick spray. Broil 4 inches from the heat, turning frequently, until crisp and golden, about 4 minutes.
Transfer the tortilla chips to a 9 x 13 inch broiler proof baking pan. Spoon the turkey mixture evenly over the chips. Sprinkle with the cheddar cheese. Broil 4 inches from the heat until the filling is hot and the cheese is melted, about 2 minutes. Top with the tomato, and scallions. Serve at once.
