S'mores Bars

Ingredients

    5-1/2 c. Golden Grahams cereal, crushed (one whole regular sized box)
    1 stick plus 2 tbsp. softened butter, divided
    4 c. mini marshmallows
    1 c. chocolate chips

Directions

Place cereal in a large mixing bowl with lots of extra room. Use 1 tbsp. butter to grease a 13x9" dish. Place chocolate chips in a microwaveable dish with 1 more tbsp. butter.

Turn on broiler to low heat. Slice the stick of butter into thin pieces and place in the bottom of a 1.5 qt. casserole dish and place marshmallows on top. Place casserole dish under broiler and let marshmallows toast. Stir and return to broiler, allowing the other side of marshmallows to toast lightly. Turn off broiler and leave dish for a few minutes to ensure marshmallows and butter have melted. Remove from heat and stir.

Add marshmallow mixture to cereal and stir until well-combined. Press into prepared pan and set in freezer.

Microwave chocolate and butter in 15 second bursts, stirring each time, until melted.

Remove pan from freezer and drizzle chocolate over cereal. Let cool for about half an hour before cutting into 24 equal sized bars. Cover with seran wrap to prevent over-drying.
