Tortellini and Shrimp Salad

Introduction

I needed something I could serve chilled. This was a compilation of ingredients I saw in different recipes and what I had in the house. I needed something I could serve chilled. This was a compilation of ingredients I saw in different recipes and what I had in the house.
Number of Servings: 3

Ingredients

    1 package of Trader Joes Spinach and Cheese Tortellini
    1 package (4 oz) Kroger Salad Shrimp
    1/2 red pepper sliced
    12 Grape tomatoes
    2 TBS. Hellmanns light Mayonaise
    2 Tbs. Kroger Fat Free Plain Yogurt
    Seasonings of your choice. I used Mrs. Dash Garlic & Herb
    a little salt, onion powder. All to taste.

    You can add fresh herbs, parsley, chives.

Tips

Serve on a lettuce leaf. I used red leaf lettuce.


Directions

Cook Tortellini as per package instructions. Defrost shrimp, by letting cool water run over it or by sitting the bag in some cool water.
Slice up the pepper and halve the tomatoes. Add everything into a bowl, and mix. Let chill in refrigerator for 2 hours.

Serving Size: Makes 3 1 cup servings
