Summer Vegetable Soup

Introduction

Quinoa, peppers, tomatoes, smoked paprika, yum! Quinoa, peppers, tomatoes, smoked paprika, yum!

Ingredients

    Yellow Pepper
    Onion
    Zuchini
    white kidney beans
    tomatoes
    carrot

Tips

I used my own canned tomatoes, which already had vegetables in them, so feel free to add your own extra veg and liquid to get to the right thickness.


Directions

dice all vegetables and add to pot, add beans, tomatoes, water and quinoa plus seasoning. (add all ingredients together in one pot.)

Bring to boil and simmer 25 minutes until quinoa is cooked and soup is thick.

season with salt and pepper to taste.

add 2 tsps. or more of red wine vinegar to add zip!
