Tasty (Sausage) Lasagna

Introduction

Ingredients

    1 14-oz package Gimme Lean - Sausage Style
    4 cups Spaghetti Sauce
    1-1/2 cups Water
    1-3/4 cups non-fat Ricotta or non-fat Cottage Cheese (15-oz container)
    2 cups shredded Mozzarella Cheese, divided
    1/2 cup grated Parmesan Cheese
    1/8 cup grated Parmesan Cheese
    1/2 cup Egg Substitute (enough for 2 eggs)
    1/4 cup chopped Fresh Parsley
    1/2 tsp Salt
    1/2 tsp Pepper
    9 Lasagna Noodles, uncooked (recommend using Ronzoni Healthy Harvest Whole Wheat Noodles)

Directions

1. Preheat oven to 350 degrees.
2, Follow package directions to brown the "sausage". When browned, add spaghetti sauce and water and simmer for 10 minutes.
3. While sauce mixture is simmering, mix together cottage cheese, 1 cup of the mozzarella cheese, 1/2 cup parmesan cheese, 1/2 cup egg substitute, parsley, salt and pepper. Set aside.
4. Spray a 9 x 13 baking pan with cooking spray.
5. Spread 1-1/4 cup of the sauce mixture on the bottom of the baking pan.
6. Place 3 lasagne noodles, uncooked, lengthwise in the pan on top of the sauce.
7. Spread 1-1/4 cup of the sauce mixture on top of the noodles, followed by 1/2 of the cheese mixture.
8. Place another layer of 3 lasagna noodles, 1-1/4 cup sauce and the remaining cheese mixture.
9. Place another layer of 3 lasagna noodles, followed by the remaining sauce.
10. Sprinkle the remaining mozzarella and parmesan cheese on top of the sauce.
11. Cover with foil and bake for 45 minutes.
12. Uncover, and bake for another 10-15 minutes or until heated through and sauce is bubbling.
13. Remove from oven and let stand for 10 minutes before cutting and serving.
14. Enjoy!
