Fried Rice

Ingredients

    1 egg
    1 T butter
    1 T canola oil
    1/2 onion, chopped
    1 cup shredded pak-choi
    1 cup snap peas
    1 small can water chestnuts
    6 oz pork or chicken
    1 T Soy sauce
    1 tsp. sesame oil
    2 cups cooked white rice

Directions

Scramble egg in butter, set aside. Cook onion, pak-choi and snap peas in oil until tender, stir in water chestnuts to heat through. Set vegetables aside. Cook pork until no longer pink. Sprinkle with soy sauce and sesame oil, stir well, then add rice and vegetables. Stir all together until hot, then mix in eggs and serve.
