Beef and Bean Casserole on Wilted Spinach

Introduction

Low glycemic load casserole that is high on taste and nutrition. High in carbs, due to the beans and potatoes, but low fat. Satisfies the tummy. Low glycemic load casserole that is high on taste and nutrition. High in carbs, due to the beans and potatoes, but low fat. Satisfies the tummy.
Number of Servings: 6

Ingredients

    Wash well 12 baby red potatoes. Cut these into 3/8 inch thick pieces. Lay these on a baking pan sprayed with PAM. Cover pan with wax paper. Bake in microwave 3 1/2 minutes on high.

    While potatoes are cooking, wash & chop 3 plum tomatoes into pieces.

    Add 6 oz of pre cooked & drained ground sirloin (10% fat). Spread evenly over the layer of potatoes. Sprinkle 1 tsp of powdered garlic over the layer, as well as 2 tsp of basil. Cover the beef with the tomatoes, then add a layer of 1 1/2 C sliced mushrooms. Use 1/4 tsp red pepper on top of this layer. Cover again. Cook for 4 minutes on high.

    Add 4 oz mozzarella cheese to the top of casserole. Heat for 1 1/2 minutes uncovered. Let the pan set up while you measure out 2 oz portions of baby spinach for each serving. I put it into a bowl, microwave it for 30 seconds and serve the casserole into the center. ENJOY.

Tips

Use pre cooked & drained beef to hasten prep time. I did all my prep while the potatoes cooked (3.5 minutes).


Directions

Can be microwaved in hot weather.
Better textures achieved in the oven, but in the summer a lighter fare is more desirable n
