Ugly Spaghetti Squash salad

Introduction

I adapted this recipe using the one on the elbow macaroni box and using Spaghetti squash instead of the pasta. It was really ugly, but deelish! I adapted this recipe using the one on the elbow macaroni box and using Spaghetti squash instead of the pasta. It was really ugly, but deelish!
Number of Servings: 4

Ingredients

    1 Spaghetti squash
    1 chopped fresh tomato
    1/2 cup black olives sliced
    1/8 cup shredded Parmesan cheese
    2 oz sliced pepperoni
    3 T balsamic Vinegar
    1 T vegetable oil

Directions

Cook Spaghetti squash while you assemble all the other ingredients. I just put the whole squash into the microwave after I've stabbed it several times to let the moisture vent out. It takes about 15 minutes to cook, and I flip it a couple of times. While that cooks, in a medium bowl put all the other ingredients and mix. When the squash is done, cut it in half lengthwise and scoop out the flesh with a fork, scraping until you just have the peel left. I scraped it right into the bowl with the other ingredients. Mix and serve! Makes 4 - 1.5 cup servings.
