IntroductionWarm and Hearty Soup. Warm and Hearty Soup.
1 1/2 lb cooked, shredded, chicken
1 150z can diced tomatoes
1 160z can Green Chile Enchilada Sauce.. (I use Medium, but less heat use Mild)
2 4 oz cans Chopped Green chilis, Mild
1 15 oz can Pinto beans, rinsed and drained
1 15 oz can Black Beans, rinsed and drained
1 Med Onion, chopped
2 Tbs. Minced Garlic
2 c. water
1 15 oz can chicken broth
2 tsp Each: cumin, chili powder
Salt and pepper to taste.
1 15 oz can sweet corn, drained
2 TBS. cilantro, chopped
cheddar and nonterey Jack cheese
sour cream for garnish
Cover and cook for 6-8 hours.
Serve with cilantro, some shredded cheese and sour cream if Desired.
