Quinoa Breakfast Bites

Introduction

Number of Servings: 24

Ingredients

    3/4 cup uncooked quinoa
    1 container of egg substitute (or 1/2 dozen eggs, beaten well)
    1 cup shredded sharp cheese
    1 medium bell pepper
    1 jalapeno pepper
    8 mushrooms

Tips

These are good with a variety of vegetables, I've used spinach, onion, feta, anything I happen to have on hand to whip up a batch of these. They're great for a snack or as a side with your breakfast.


Directions

Prepare quinoa according to package directions using water.
Allow quinoa to cool.
Chop bell pepper, jalapeno pepper and mushrooms into small dice size.
Mix vegetables, quinoa and cheese together in a large bowl.
Pour in eggs and mix well.
Lightly grease 2 regular size muffin tins and preheat oven to 350F.
Fill each muffin cup half to 3/4 full to ensure you have all 24 muffin cups filled with mix.
Bake in oven for 10-15 minutes, until set.
Remove from oven and allow to cool in pan.
Can be served warm or cold.

Serving Size: Makes 24 bites, 1-2 bites per serving
