Chick - a - Bean Salad

Number of Servings: 12

Ingredients

    3 chicken breast
    2 cups kidney beans
    2 cups chick peas
    2 cups black beans
    1/2 red pepper
    1/2 green pepper
    1/2 red onion
    4 cloves garlic
    1/2 lime
    2 cups canned diced tomatoes with chilies
    1 cup salsa

Directions

Dice up the onion, peppers and garlic. Cut the chicken into bite size pieces. Spray a nonstick pan and begin to cook chicken. When chicken is cooked add in the diced garlic, peppers and onions. Seson with salt and pepper.
Drain the 3 beans and put then unto a big bowl. Add in the salsa and lime juice.
When the veggies are cooked, remove from heat and combine with the beans in a large bowl. Serve right away warm, or chill and serve cold.
Goes great with chips, or lettuce envolopes and can also be used as filling to any taco or burrito.
