Ingredients

Chicken
2 Chicken Breasts, no skin, bone and skin removed
2 Tbsp Honey
1 Jalapeno Pepper (seeded & chopped)
Tomato Olivado
2 Tbsp Honey
1 Red Ripe Tomatoes (medium) - diced
1/2 Green Pepper (bell pepper) - chopped
1/2 Red Onions, raw (small) - chopped
1 Tbsp Sherry Wine Vinegar
1 Tbsp Olive Oil
Directions
1. Chicken: In a bowl, mix jalapeno and honey.
Rub mixture over chicken, cover and refrigerate
for 1 hour.
2. Tomato olivada: In a medium sized bowl,
stir honey, tomato, green pepper, onion,
sherry vinegar and olive oil
(refrigerate until serving)
3. Heat grill to medium-high or prepare
charcoal grill with medium-hot coals.
Grill chicken 11 to 12 minutes, turning halfway
through cooking time or until internal
temperature reads 160 on an instant-read
thermometer.
4. Half chicken breasts to create four portions
and top with tomato olivada.
