Easy Pasta Prima

Introduction

Number of Servings: 4

Ingredients

    4 oz whole wheat spaghetti
    1 cup broccoli florettes
    1 cup cauliflower florets
    1 teaspoon of minced garlic
    1 can stewed tomatoes with Basil, Garlic and oregano
    1 can sliced mushrooms, drained
    Dried oregano (to taste)
    Dried Basil (to taste)
    Black Pepper (to taste)

Tips

It was great with the tuna, and I had leftovers for lunch.


Directions

Bring water for pasta to a boil. Cook spaghetti according to package instructions until done. Remove the pasta from the water and place in collendar.
Bring water back to a boil. Add Broccoli and Cauliflower cook for 5 minutes or until broccoli is bright green color.
Place vegetables in collendar with the pasta and run cold water over it to stop the cooking.

Keep out 1/2 cup of pasta water and drain the rest. Add some non stick spray and the minced garlic, cook for just a minute and then add the mushrooms. Allow to brown slightly, then add the tomatoes. Boil down to reduce and thicken the sauce. Add the pasta and vegetables and the cooking water. Heat til hot and serve.
