Introduction

A quick throw together salad that tastes great and is a healthy alternative to other sides. Especially great during the summer. A quick throw together salad that tastes great and is a healthy alternative to other sides. Especially great during the summer.

Ingredients

    1 peeled, de-seeded cucumber, cubed
    2 tomatoes, diced
    1/2 small onion, finely chopped
    1/4 cup shredded mozzarella cheese (low fat, skim)
    1.5 tablespoon lemon juice

Tips

This can easily be made vegan by either substituting the cheese out with a vegan-friendly cheese food OR removing it from the recipe completely.


Directions

Mix all ingredients in a bowl and refrigerate.
