quick fried snapper

Number of Servings: 4

Ingredients

    4 6oz fillets
    1/2 lemon
    salt and pepper
    1/4 cup flour
    4 tsp olive oil
    1 tsp butter

Directions

squeeze half the lemon on fish
sprinkle half of the salt and pepper on the fish
add the other half of salt and pepper to flour, and mix well.
dredge fish fillets into flour on both sides.
put olive oil and butter into pan and heat till hot, then lay fish slices into oil, flip when browned on one side and fry other side till brown. Serve right away with the other half lemon cut into wedges.
Makes 4 servings of just under 6 ozs. each.
Salt can be elimated if wanted.
