Mama's Chicken Meatloaf

Introduction

Mom got this recipe from a diet but she can't remember which one. She then proceeded to take all the 'diet' out by replacing turkey bacon with real bacon and lite BBQ with Sweet Baby Ray's. Here's her notes:

This recipe is low cal and high flavor. Made it first at Fort Benning. Makes two loaves so there are sandwiches for lunch. Hunter, our shepherd, also loved the recipe because he got the egg yolks (although he would have prefered the chicken)

Number of Servings: 8

Ingredients

    2 lbs Ground chicken (Mom buys one package of the extra low fat and one regular
    2 cups Red Onion chopped
    8 slices bacon
    1 1/3 cup fat free milk
    4 large egg whites lightly beaten
    2 cloves garlic, Minced
    2 tsp Worcestershire sauce
    1/4 tsp salt

Tips

If you use turkey bacon and lite BBQ sauce it reduces the sodium and sugars...and flavor.


Directions

Mix all ingredients and form two loaves
top with 1/3 of a cup BBQ Sauce each loaf
Bake for 35-40 mins

Serving Size: makes 2 loafs of 8 slices each a serving is 2 slices
