Introduction

Another recipe from the side of a box. This one seems unlikely, but is really good. Number of Servings: 8

Ingredients

    2 Tbsp. olive oil
    1.5 cups diced veggies--zucchini, red bell pepper,carrot and/or onion
    1 tsp. minced garlic
    2.25 cups chicken broth
    1.5 cups of couscous
    2 cups crunchy granola raisin bran cereal

Directions

Heat the Olive oil in a medium size pan over medium heat
Add and saute for 3 minutes:
1 1/2 cups vegetables -zucchini, red bell pepper, carrots and or onion

Add and bring to a boil:
1 tsp minced garlic
2 1/4 cups chicken broth

Slowly add stirring until blended:
1 1/2 cups couscous

Remove from heat, cover and let stand for 5 minutes

Add:
2 cups Crunchy Granola Rasin Bran coarsely crushed to about 1 1/4 cups

add Salt and Pepper to taste

Serving Size: makes 8 servings
