Vegetable Sausage Italian Casserole

Ingredients

    3 Links Sweet Italian Sausage, sliced
    3 Links Hot Italian Sausage, sliced
    1 Can Cannellini Beans
    1 Can Tomato Sauce
    1 Jar Spaghetti Sauce (I used Classico Fire Roasted Tomato & Garlic)
    1 14.5oz Box Smart Taste (Ronzoni) Penne Rigate
    1 Bag frozen Stir-fry vegetables
    1 Red Bell Pepper, sliced
    1 Med. Onion, sliced
    1.5 Cups Cabot 50% Light Shredded Cheddar Cheese

Directions

Fry sausage slices. Add Pepper and Onion, cook until tender. Add beans and frozen vegetables.

Boil water and cook pasta according to directions.

Mix sausage, vegetables, pasta, sauces and put into casserole dish. Sprinkle with cheese.

Bake in 350 degree oven until cheese is melted (10 - 15 minutes)

Makes 8 (2 cup) servings
