    * Olive Oil, 2 1tsp
    * Mushrooms, fresh, 227 grams
    * Salt, 1 dash
    * Pepper, black, 1 dash
    * Scallions, raw, .25 cup, chopped
    * Red Ripe Tomatoes, 1 cup cherry tomatoes
    * Basil, 1.33 tbsp
    * Lime Juice, .5 fl oz
    * Jalapeno Peppers, .5 cup, sliced
    * Artichoke hearts, canned, 396 gram(s)

Directions

1. Cook quinoa according to instructions
2. Heat oil in a skillet and cook mushrooms until tender
3. Combine remaining ingredients
4. Add cooked quinoa and mushrooms.
