Healthy Chicken Tostadas

Ingredients

    Mission Low Carb Tortilla (or use your favorite low card whole wheat tortilla)
    1 Boneless Skinless Chicken Breast
    1 Roma Tomato
    small amount of chopped Onion
    Bush Best Pinto Beans ( or your favorite type such as black beans or fat free refried beans)
    Cheese (Fat Free or Reduced Fat cheese any blend you prefer I used Mexican blend)
    Iceberg Lettuce (just enough to put on the top)
    Garlic Powder
    Sea Salt
    Black Pepper
    I cant believe its not butter
    Pam

    you can also add you favorite veggies such as corn, red peppers, jalepenos, avacado and so on....
    Also you can use any spices you have

Directions

Pre Heat oven to 350...

Take the boneless skinless chicken breast (1 medium chicken breast will make 2 to 3 tostadas using) and make sure to cut the rest of the skin or fat that might be on it. Then wash it. After that add some spices and seasonings, I used black pepper, Sea salt, Chili powder, and garlic. Season to your liking and you can always add other spices that you have.

Get a non stick skillet and turn on medium heat and add the chicken.

While the chicken is cooking, grab a baking sheet and spray with Pam... After that lay out how many tortillas you want on the baking sheet.

Spray the top of each tortilla with "I Cant Believe its not Butter" just 2 or 3 sprays per tortilla. Place in oven for about 2 to 3 mins.

Its time to start the beans. If its pinto or black place them in a pan on low heat and stir often. For refried follow directions on the can.

After placing the tortillas in the oven and starting the beans its time to flip the chicken.

Check on the tortillas and if they start to turn brown before the 2 to 3 mins pull them out and flip over if not when the time is up pull them out and flip over and stick them back into the oven. Keep flipping until you get the right amount of crispiness that you want...

Time to cut the veggies slice a tomato into small peices and same with onions and lettuce. Only use a small amount of each since you do not need a lot to go on top.. Place off to the side ( i always like to put them in small bowls)

Check your chicken and once the juice runs clear and the meat is cooked all the way pull it off and put it on a cutting board. Cut into small peices (bite size)

Once everything is cooked and cut, its time to build your tostadas....

Place the tortilla on a plate add the beans on top and then the chicken on top of that. Then add the cheese on top of that. Wait a min so the cheese can melt. After that add the lettuce, tomato, and onion and enjoy...
