Mexican (flavored) Meatballs or Meatloaf!

Introduction

This mixture can be made with either lean ground beef (I use 4% fat) or ground turkey! It can also be made into meatballs, meatloaf or patties for burger!!! Number of Servings: 28

Ingredients

    1 lb Extra Lean Ground Beef or Ground Turkey
    1/2 cup WHOLE WHEAT Bread Crumbs
    1 medium Carrot, finely diced
    2 stalks Celery, finely diced
    1 medium Onion, finely diced
    1/2 cup Salsa. homemade or jarred
    1 T Taco Seasoning
    1/4 Organic Catsup
    Optional : fresh cilantro, jalapeno peppers or chipotle chiles can be added for more heat or flavor!!!!!



Directions

Cook diced vegatables in medium saute pan sprayed with cooking spray until slightly softened. Add salsa, taco seasoning and catsup and cook over low heat for 3-5 minutes. Add 1-2 tablespoons of water if needed. Set aside and let cool for at least 15-20 minutes.


Place ground meat in a large mixing bowl with bread crumbs and cooled salsa mixture. Mix until blended. DO NOT OVERMIX AS THIS WILL CAUSE TOUGH MEAT IN THE END RESULT.


Form into either 24-28 meatballs or one meatloaf or 6 patties. Place on a baking sheet sprayed with nonstick spray or lined parchment paper

Meatball: Bake in 375 degree oven for 30 minutes . Serve with whole wheat pasta!!


Meatloaf: Bake in 375 degree oven 45-60 minutes. Addtional catsup can be used to top meatloaf during last 10 minutes of baking!


Burgers: Can either be baked in a 375 degree oven for 30-45 minutes or grilled on the stovetop. They make be too moist for the BBQ!!
