Number of Servings: 16

Ingredients

    water, 16 cups
    vegetable bouillon, 8 cubes
    pearled barley, 1 cup (uncooked)
    black-eyed peas, 1 cup (uncooked)
    red & green lentils, 1 cup (uncooked)
    lima beans, 1/2 cup (uncooked)
    black beans, 1/2 cup (uncooked)
    red kidney beans, 1/2 cup (uncooked)
    4 tomatoes, chopped
    12 scallions, chopped
    3 celery stalks, chopped
    2 cups carrots, chopped
    1 cup red potatoes, chopped
    4 cups spinach
    1 teaspoon coriander
    1 teaspoon celery salt
    salt & pepper to taste

Directions

Soak beans according to directions. Place water bouillon cubes, beans, scallions, tomatoes, celery & spices together in big pot. Bring to a gentle boil & then reduce heat to simmer for one hour & 10 minutes. When beans are almost cooked through, add carrots & potatoes. In last 10 minutes of cooking, add spinach. Make sure to add water as needed.
Makes 16 one cup servings
