4 cups uncooked regular OR quick oats
1 and 1/2 cups mashed ripe bananas - about 3 bananas
2/3 cup honey
2/3 cup canola oil
1/2 cup raisins (or dried prunes or apricots)
1/2 cup chopped walnuts or other favorite nuts
1/2 cup sunflower seeds
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
In a large mixing bowl, cream together the butter and sugar until consistency is "fluffy". Add egg, bananas, cinnamon and salt and stir. Add all remaining ingredients and stir until mixed well.
Spread mixtured into baking pan.
Bake about 50 minutes or until a toothpick comes out clean.
Allow bars to cool before cutting into 24 squares and serving.
