Savory Peach Soup

Introduction

Number of Servings: 6

Ingredients

    6 very ripe peaches (soup is much prettier if made with yellow peaches, but tastes just as good with white)
    1/2 medium cucumber
    1 small clove garlic (remember, this stays raw)
    1 small shallot
    fresh basil - to taste (start with 4 big leaves)
    olive oil - to add some texture and taste (start with 1 Tbsp)
    sherry vinegar - to taste (start with 1 tsp)
    salt & pepper - to taste
    water - to get the right texture

Tips

possible garnishes: chopped tomato, chopped avocado, basil leaves


Directions

Peel and chop up peaches, cucumber (get rid of any big seeds), garlic and shallot.

Throw all but water in a large bowl. Use immersion blender to completely blend. Or can be done in regular blender or food processor. May need to do in batches. Adjust all ingredients to taste. The good thing about this being raw is that you can keep adjusting since none of it needs to be cooked.

And water to thin to a texture you like (it definitely needs thinning).

Serving Size: 6 good sized bowls
