Introduction

Dairy and Gluten Free... Dried apricots can be replaced with your dried fruit of choice... Dairy and Gluten Free... Dried apricots can be replaced with your dried fruit of choice...
Number of Servings: 6

Ingredients

    2/3 Cup White Rice

    1 Can 500 ml Grace Coconut water
    2 Eggs
    1/2 C Dried Apricot (diced small!)

Tips

20 min of prep time is the time required to cook the rice.


Directions

1. Cook the rice. (as per instruction)
2. Mix Eggs and Coconut water. Set aside.
3. Pour rice into a 8X8 pan. Cover with the water and egg mix. Add the apricot (or dried fruit of choice).
4. Bake for 25 min. Stir well and bake again for 25 min.

Good warm or cold.
