Stuffed Green Peppers

Ingredients

    4 med green peppers, cut lengthwise, with seeds and stems removed

    FILLING
    1 lb. 93% lean ground beef
    1 med Vidalia onion, finely chopped
    1 can (8 oz) tomato sauce
    1/4 cup water
    1 T grated parmesan cheese
    3/4 t salt
    1/2 t dried marjoram
    1/8 t pepper
    1/2 cup uncooked instant brown rice

    SAUCE
    1 can (8 oz) tomato sauce
    2 t packed brown sugar
    1/4 t dried marjoram
    1/8 t pepper

    TOPPING
    2 T grated parmesan cheese

Tips

Since all microwaves are different, you may need to adjust the cooking time somewhat to achieve good results. Always make sure beef is fully cooked.


Directions

For filling, in 1 quart casserole, combine ground beef and onion. Microwave on high for 4 to 5 minutes, or until the beef is no longer pink, stirring once. Drain. Stir in tomato sauce, water, parmesan cheese, salt, marjoram and pepper. Cover. Microwave on high for 2-1/2 to 3-1/2 minutes, or until mixture bubbles. Stir in rice. Re-cover. Let stand for 5 minutes.

Arrange pepper halves, cut side up, in a 9x13 glass baking dish. Spoon an equal amount of filling into each pepper half.

For sauce, in a small bowl, blend all ingredients. Pour over peppers. Top each pepper half with a sprinkle of parmesan cheese.

Cover dish with plastic wrap. Microwave on high for 10 to 12 minutes, or until peppers are tender, rotating dish once. Let stand for 5 minutes.

Serving Size: Makes 4 servings - 2 filled halves per serving
