Introduction

roast sliced eggplant -seasoned, tomato, mushroom & mozzarella cheese roast sliced eggplant -seasoned, tomato, mushroom & mozzarella cheese
Number of Servings: 14

Ingredients

    1 medium size eggplant, washed & sliced
    1 ripe beefsteak tomato, washed & sliced thin
    3 baby bella mushrooms, washed & sliced thin
    Veggie Mozarella cheese shreds (galaxy foods)
    mixed seasoning:
    No salt (no sodium), pepper, garlic salt & italianherb
    seasoning
    flaxseed oil, brushed both sides eggplant slices

Tips

These are light & tasty, eat as many as you want and walk away full!


Directions

Brush both sides eggplant slices with flaxseed oil from
capsules. Sprinkle top side with seasoning and bake
at 350 deg F for ten minutes.
Remove from oven & top with sliced tomato and mushroom pieces. carefully arrange mozzarella on top.
Bake again 8 minutes at 375 deg F.
Remove from oven & cool.

Serving Size: Makes 10-14 minipizzas
