Thai Ginger Chicken Soup

Ingredients

    I cup shredded carrots
    1/2 cup red pepper, chopped.
    1 cup cabbage, shredded
    1 cup mushrooms, chopped
    1 12 oz. can chicken
    32 oz. Thai Ginger Infused Broth (Swanson)
    1 can (13.66 oz) light coconut milk
    3 T. cilantro

Directions

Combine everything but the coconut milk. Simmer until the vegetables are tender. Add coconut milk and heat until warm.

Serving Size: Makes 4 2 cup servings or 8 1 cup 1st course
