Whole Wheat Sourdough Bread

Ingredients

    2 cups sourdough starter
    1 cup warm water
    1tsp salt
    2 Tbsp honey
    4 cups whole wheat flour
    1 cup all purpose flour (for kneading)

Tips

If your kitchen is warm, you may not need 8 hours for the initial rising. Watch the dough.


Directions

In a large glass bowl, add sourdough starter, water, salt and honey. Stir to mix well. Add in whole wheat flour, one cup at a time mixing until incorporated before adding more. When mixture comes away from the sides of the bowl in one ball, turn out to knead. Using AP flour knead the dough for 15 minutes dusting with flour when needed. Let the dough rise in a warm place for 8 to 12 hours doubling in size. Punch down and form into loaves. Let rise again for 30 minutes to 2 hours allowing to double in size again. Bake in a preheated 400 F degree oven for 15 minutes. Turn oven down to 350 F degrees and continue baking for 25 more minutes. Allow to cool before slicing.
