Joys Granola

Ingredients

    5 cups old fashioned rolled oats
    1 cup shredded coconut
    1.5 cups pecans or walnuts, coarsely chopped
    .5 cup brown sugar
    .5 cup canola oil
    .25 cup honey
    .25 cup molasses
    1 tsp. salt
    1-2 tsp. cinnamon
    1.5 tsp. vanilla


Directions

Preheat oven to 300 degrees.
In a large bowl mix dry ingredients.
In a glass measuring cup mix oil, brown sugar, honey, molasses, salt and cinnamon.
In microwave heat wet ingredients until sugar is dissolved. Do not boil.
Stir in vanilla.
Pour wet ingredients over dry ingredients and stir to coat.
Spread evenly in large pan. I use the broiler plan from my oven.
Bake 20 minutes. Remove from oven and stir. Bake an additional 15 minutes. Remove and stir. Cool. Add raisins, craisins, and other dried fruit as desired (not calculated in nutritional information. Store in airtight container. Glass jar is best. Use within 6 months.
